Ranch Potato Bake...MMMMMM...

O.k. - it's not like we aren't gonna be eating A LOT in the next couple of days...but... I tried this new recipe - easy and simple - and thought maybe some of you would like to try it over the Thanksgiving holiday. I think it kind of tastes like a loaded baked potato - yummy. It would be great served with a meal or maybe while everybody is hanging out watching the ball game.

But before I get started, I wanted to wish you all a wonderful and blessed Thanksgiving. May you enjoy your families and may we all remember how very blessed we are. I am ever so grateful for the blessings in my life - my family, my friends, my job, my health - and yes, for my wonderful blogging buddies - so have a beautiful Thanksgiving.
Here we go...
Scrub 8-10 red potatoes - slice and boil in saucepan until tender...
In a bowl, mix sour cream, ranch dressing, parsley flakes, shredded cheese and real bacon bits...
When potatoes are done, place them in the mixture a few at a time, toss gently to coat - arrange potatoes in a greased 9X13 inch baking dish. Top with remaining cheese (3/4 c.), crushed cornflakes and melted butter (combined).

Bake covered at 350 degrees for 25 minutes, uncover and bake for 15-20 minutes or until browned.

Ingredients -
8-10 medium red potatoes
1 cup sour cream
1 cup ranch salad dressing
2 tablespoons parsley flakes
1 3/4 cups shredded Cheddar cheese
1/4 cup real bacon bits
2 cups slightly crushed cornflakes
1/4 cup butter, melted
Everybody Enjoy!!! and Happy Thanksgiving!!
Cathy

Yummy looking recipe. Thanks for sharing. It looks so much better than the traditional Hash Brown Potato Bake. I will be trying this one soon.
Also on the last post you talked about spray painting Hydrengas. They turned out so pretty and I will be trying that.
Hoping you too have a Blessed Thanksgiving.

DEAR CATHY,
THIS IS MY FIRST TIME TO VISIT YOUR BLOG. YUMMY...YUMMY...YUMMY
THAT SOUNDS ALMOST SIMILAR TO THE POTATO THAT CHILI'S MAKES. I WILL DEFINITELY BE MAKING THESE. OH GIVE ME A POTATO AND I AM A HAPPY WOMAN.
I JOINED AS A FOLLOWER OF YOUR BLOG AND WOULD BE HONORED IF YOU VISIT ME AND JOIN MY BLOG AS I DON'T WANT TO MISS A THING.I LOVE TO MAKE NEW FRIENDS AND SHARE RECIPES AND IDEAS.
I DID NOT KNOW YOU COULD SPRAY PAINT HYDRAGENAS....HOW LONG WILL THEY STAY NICE.....
HAPPY BELATED THANKSGIVING TO YOU AND YOUR FAMILY.
WE WENT OUT TO EAT FOR THANKSGIVING AS MY ONLY DAUGHTER BEAT CANCER AND GRADUATED TO GLORY WITH OUR JESUS ON OCT. 23, 2009.
WE JUST COULDN'T CELEBRATE AT HOME BUT WE HAD A CHAIR FOR HER WITH PICTURES AND WE TALKED ABOUT FUNNY THINGS WITH HER.
I HAD NO EARTHLY IDEA HOW MANY PEOPLE GO OUT TO EAT ON THANKSGIVING DAY....THERE WAS A WAITING LINE OUTSIDE AND A 15-25 MINUTE TRIP TO GO DOWN ONE SIDE OF THE BUFFET LINE......WE HAVE NEVER EATEN A HOLIDAY OUT SO WE WERE SHOCKED....I FIGURED THERE WOULD NOT BE MANY PEOPLE EATING OUT...
I LOVE ALL YOUR IDEAS.
IT IS VERY NICE TO MEET YOU CATHY.

I hope you and your family had a wonderful Thanksgiving. I think those potatoes would be a big hit anytime of the year! I am not a big fan of peeling potatoes so I really like this recipe.
